The process of precision fermentation has been used globally for decades to make insulin, vitamin B12, and rennet – an ingredient in most store-bought cheese. Now, ingredient companies are using that technology to create animal-free proteins, flavors, pigments, fats, and more!

Our Process

Eggs contain hundreds of proteins. After ten years of research, EVERY® has perfected how to produce two key proteins at scale—delivering the same functional and nutritional benefits as those found in eggs.

We start with nature’s blueprint. Using a digital database, we find the exact genetic sequence for the protein we want.
We program yeast to do the work. We modify yeast cells to make that protein, just like they’d make beer — only instead of alcohol, they make egg protein.
We let them brew. Inside fermentation tanks (like the ones used in beer brewing), we feed the yeast sugar and water. The yeast then naturally produces the egg protein.
We harvest the protein. The final product is a pure, powdered protein that is tasteless, colorless, sugar-free, and can be used to replace the functionality of eggs and egg whites in a range of applications. This process ensures a highly functional, consistent egg protein without risk of contamination or disease.
